Strawberries + Cream
Strawberries + Cream Instant Pot Steel Cut Oats- No more standing over the stove stirring steel cut oats! The Instant Pot makes whipping up a pot of perfect, creamy, hearty steel cut oats a snap. Top oats with sliced strawberries and a honey yogurt “cream” for a tasty hot breakfast.
Servings: 6 servings
- Coconut oil- for lightly greasing pot or butter
- 2 cups steel cut oats I’m a big fan of Bob’s Red Mill steel cut oats
- 3 cups almond milk or other non-dairy milk
- 2 cups water
- 1 teaspoon vanilla extract
- Pinch of salt optional
- ½ cup Greek yogurt plain or honey ( or your favorite plant based yogurt)
- 1-2 tablespoon honey or agave, or maple syrup
- 1 cup strawberries sliced
Lightly grease the pot with coconut oil or butter. Add steel cut oats, almond milk, water, vanilla extract and salt (if using) to pot and stir to combine.
Lock the lid and set the vent to SEALING. Select MANUAL/PRESSURE COOK and cook for 5 minutes on HIGH PRESSURE. After oats have finished cooking, allow the Instant Pot to NATURALLY RELEASE ( about 15-20 minutes).
Open lid carefully and stir the oats. The oats may look slightly watery when you first open the lid (this is normal) once you give them a stir they will thicken up.
In a small bowl mix Greek yogurt and honey. Add a small amount of water to thin yogurt and create a thick “cream” consistency. Serve oatmeal and top with yogurt “cream” and sliced strawberries. Drizzle with extra honey if desired.
Make sure to lightly grease the pot
Because oats are notorious for “foaming” when cooking, I’m recommending to lightly grease the sides and bottom of the Instant Pot with coconut oil or butter. Lightly greasing will help to keep the “foam” from climbing up the side of the Instant Pot, potentially clogging the pressure release valve. Plus, it helps keep clean up super simple.
For extra strawberry flavor
If you’d like even more strawberry goodness, you can stir sliced strawberries (fresh or frozen) into the Instant Pot at the same time you add oats, water and almond milk.
Or, add a dollop of strawberry jam along with the sliced strawberries and “cream” topping (or stir into oatmeal before topping with sliced strawberries and cream).
