    Everything Avocado Toast with "Jammy" Eggs- If you like Everything Bagels you're going to love this healthier option! Artisan bread is topped with heart healthy avocado and a soft-boiled "jammy" egg, a drizzle of olive oil and everything bagel spices.     Today's post is serving double duty! We'll be talking about how to make Everything Avocado Toast with "Jammy" Eggs as well as How to Make Perfect Soft Boiled Eggs in the Instant Pot. They go hand in hand 🙂

    Perfectly cooked soft-boiled eggs are so quick and easy to make in the Instant Pot! They are sometimes referred to as "jammy eggs" or "ramen eggs" because the whites of the eggs are set but the yolks remain a bit runny have and a consistency similar to "jam".

    How to Make Perfect Instant Pot Soft Boiled ("Jammy") Eggs

    1. Pour 1 cup of water into the Instant Pot. Place the trivet/steam rack at the bottom of the Instant Pot. Carefully place desired number of eggs on the rack ( up to a dozen).
    2. Lock Instant Pot and set vent to SEALING. Set to MANUAL/PRESSURECOOK, high pressure, for 3 minutes. ( or cook for 3 minutes on low pressure for a more runny yolk)
    3. While eggs are cooking, prepare the ice bath by filling a large bowl with cold water and ice (leaving enough room for the eggs).
    4. When the cooking cycle is complete, QUICK RELEASE the pressure manually by turning the vent/quick release valve to the open position. Once steam is fully released and the float valve is down open the instant pot, remove the eggs with tongs, and place in the ice water bath. Allow eggs to fully cool for 5 minutes before removing from ice water.

    How to Serve Instant Pot Soft Boiled "Jammy" Eggs

    Enjoy soft-boiled "jammy" eggs all on their own with some salt & pepper, or top avocado toast (like the recipe below for Everything Avocado Toast with "Jammy" Eggs ), in a bowl of ramen, or on salads (such as Niçoise or Caesar salad), top cheesy grits or a grain bowl....and so many more options. The Instant Pot makes cooking perfect soft-boiled eggs foolproof!

    How to Make Everything Avocado Toast with "Jammy" Eggs

    1.Toast bread slices.

    2. Cut avocado in half, remove pit, scoop avocado with spoon and place half on each piece of toast and “smash” with backside of fork.

    3. Top each piece of toast with ½ soft boiled egg and a drizzle of olive oil. Sprinkle with spices (poppy seeds, sesame seeds (white and black), onion flakes, garlic flakes and sea salt.

    Recipe Notes:

    High Pressure vs. Low Pressure cooking

    Depending on how "soft" you like your soft-boiled eggs you may consider setting the pressure on the Instant Pot to low pressure. The eggs shown here on the Everything Avocado Toast with "Jammy" Eggs have been cooked on high pressure for 3 minutes. You can see they are still a bit runny in the middle but somewhat set towards the edges of the yolk.

    If you like your soft-boiled eggs more runny ( think dip the points of your toast in kind of runny) opt to cook them for 3 minutes on low pressure instead of high pressure.

    Ingredients

    For the Soft Boiled Eggs

    • 1 cup water
    • 2 Eggs or desired quantity – up to 12 large eggs
    • Trivet/Steam Rack that came with Instant Pot or steamer basket, metal or silicone
    • Ice Bath- large bowl with cold water and ice

    For the Avocado Toast

    • 2 slices of crusty Artisan bread toasted
    • 1 Avocado
    • Olive oil for drizzle
    • Pinch of poppy seeds
    • Pinch of sesame seeds white
    • Pinch of sesame seeds black
    • Pinch of dried onion flakes or dried minced onion
    • Pinch of dried garlic flakes or dried minced garlic
    • Pinch of sea salt

    Instructions

    For Soft Boiled ( “Jammy”) Eggs:

      FYI: the Recipe Notes says the toast with 1/2 egg and avocado has nearly 2 grams less protein than the egg alone.

        Hi Pam...the protein info for just the egg is for one whole egg ( 6.3 g protein) and the info for the avocado toast is for the toast + avocado + 1/2 egg so 3.1 gr of protein comes from the 1/2 egg and the remainder from the avocado. Hope that helps explain the difference.
